The scent of banana bread baking in the oven is one of my favorites in the whole world. If you have someone special coming over, it will make your whole house feel warm and inviting! Hot tip: Try adding ½ cup butterscotch chips or milk chocolate chips. The combination of chocolate and banana is…bananas! Cheesy joke #452.

To make muffins, scoop into 2 baking-sprayed regular-sized muffin tins and bake for about 20 minutes. This recipe will make about 2 dozen muffins. If you only want one dozen, cut the recipe in half. Cutting a warm banana muffin in half and smearing it with butter is something I see in my dreams quite often.

Banana Bread:


  • Cooking spray

  • 1 ¾ cups all-purpose flour

  • 1 teaspoon baking soda 

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon 

  • A few gratings of fresh nutmeg (optional)

  • 1 teaspoon salt


  • 4 very ripe bananas

  • 8 tablespoons (1 stick) unsalted butter, melted

  • 1 cup light brown sugar

  • 2 eggs 

  • 1 tablespoon vanilla extract 

  • Special equipment: Loaf pan

Directions:

  1. Preheat the oven to 350 degrees F. Spray the loaf pan with baking spray, or line with parchment paper for easy removal. 

  2. In a large bowl, combine the flour, baking soda, baking powder, spices, and salt, and set aside. Melt the butter in a saucepan, then pour into a small bowl and allow to cool slightly.

  3. Peel the bananas, discard the peels, and place in a medium bowl. Mash with a fork or potato masher until creamy. Stir in the melted butter, brown sugar, eggs, and vanilla.

  4. Using a spatula, create a well in the center of the dry ingredients and add the wet ingredients. Use the spatula to fold all of the ingredients together just until combined, and then pour the batter into the prepared loaf pan.

  5. Bake for 1 hour to 1 hour-and-20 minutes. Use a toothpick or chopstick to stick into the bread to check for doneness. If it comes out gooey, it needs more time. 

  6. My recommendation is to enjoy a slice warm smeared with salted butter and drizzled with honey. It’s what happiness tastes like.
